There isn't a specific time-stamp for all of those items, but several are easy to do. Create Date in the incident object is the easiest gives you when the process was created, Add the collection of third party, with customer items to the query and all will show as tabs at the bottom and you can put the create date on there.
Alternatively for collections you could also write a calculation which would save the current With Customer Date as an attribute on the Incident. You could then add that to the query like creation date. Same idea for other collections. If you look at the standard calculation in the OOTB database for current analyst, you will get the idea.
As you work for an LD partner, I would have thought this would have been covered on the partner boot camp training. If you haven't had a chance to go on that I strongly recommend you do.
